Lemon Generals Cauliflower

I am obsessed with this recipe. I wasn’t too sure how it would turn out since its not chicken, but we definitely did not feel like we missed out after tasting the final product. The cauliflower is coated in slurry and fried up (I looked up nutritional facts on frying cauliflower out of curiosity and its still a much healthier alternative than fried chicken)! I wanted to use lemon because I haven’t seen a lemon generals recipe before and we like to mix things up around here. The lemon flavor really brings out the spices and compliments everything so nicely! It is a simple recipe and does not take much time at all. I am so eager to share it with you all 🙂

Ingredients:

Coating for Cauliflower (slurry)

  • 1 Head Cauliflower, washed and trimmed into florets
  • 1 cup cornstarch
  • 1/4 low sodium soy sauce
  • 1/4 rice vinegar
  • 1 beaten egg

For Frying:

  • 3-4 cups vegetable oil

Sauce:

  • 2 garlic cloves, minced
  • 1 tsp ginger, minced
  • 1/4 low sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1/4 rice vinegar
  • juice of 1 lemon
  • pepper to taste
  • pinch of red pepper flakes
  • 1/2 tsp cayenne pepper
  • 1 tablespoon cornstarch
  • Green onion (optional for garnish)
  • Sesame Seeds (optional for garnish)

Directions:

  1. Begin by making your coating for your cauliflower. Combine all ingredients in a large bowl and mix until cauliflower is well coated and the mixture looks close to a pancake batter. Allow to marinate for 10 minutes.
  2. Heat vegetable oil in a pan over medium high heat. You will know the oil is ready when you sprinkle a drop of water and it splatters.
  3. Using tongs, add 6-7 pieces of cauliflower at a time and cook until golden brown. Place cooked pieces on parchment paper. Repeat with all cauliflower.
  4. In a medium bowl mix all sauce ingredients except garlic and ginger. In a large skillet, over medium heat, saute garlic and ginger until fragrant. Stir in sauce, it will thicken very quickly (30 seconds to 1 minute). Turn heat off, toss in fried cauliflower to coat. Serve over rice and pair with your favorite veggies.
