Chicken Fajita Taco

Servings: 6-7 Tacos

Ingredients:

  • 2 thinly sliced chicken breasts
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1/2 medium red onion, sliced
  • 1 tsp chili powder, plus more for chicken
  • 1 tsp salt, plus more for chicken
  • 1 tsp pepper, plus more for chicken
  • 1 tsp paprika, plus more for chicken
  • 1 tsp cumin, plus more for chicken
  • Avocado Slices (optional)
  • Cilantro (optional)
  • White corn tortillas
  • Avocado cream sauce (optional):

    • 1 avocado
    • 1/4 cup cilantro
    • 1 garlic clove
    • 1 jalapeño, seeded
    • 1/2 cup plain Greek yogurt
    • 1 tsp salt
    • 1 lime, juiced

    Recipe:

    Preheat oven to 400F. Line baking sheet with parchment paper. Place vegetables on baking sheet and drizzle with oil. Season veggies with seasonings, toss to coat. Slide veggies over to side and spread evenly. Place chicken on same baking sheet and brush with oil. Sprinkle chicken on both sides with chili powder, paprika, cumin, salt and pepper. Bake for 25-30 minutes until chicken reaches internal temp. 165F. Slice chicken breasts into strips. Serve on tortillas with vegetables and garnish with favorite toppings.
